Ingredients
1 tin plum tomatoes
3 tbsp olive oil
1 garlic clove, finely chopped
25g/1oz parsley chopped
25g/1oz basil chopped
salt and freshly ground black pepper
50g/1¾oz pasta squares, sliced into strips and blanched
To serve
50g/1¾oz smoked mozzarella, ripped into chunks
sprig of parsley
Method
1. Place the tomatoes, olive oil and garlic in a saucepan.
2. Simmer until thick, stir in the herbs then season with salt and freshly ground black pepper.
3. Add the pasta and stir together.
4. Serve in a bowl with the mozzarella on top and garnish with the parsley.
