Tagliatelle with broccoli and tomato sauce

Ingredients

For the tagliatelle
100g/3½oz plain flour, plus extra for dusting
1 free-range egg
For the sauce
1 tbsp olive oil
½ onion, chopped
1 garlic clove, chopped
½ broccoli head, cut into florets
2 tomatoes, chopped
1 tbsp tomato purée
1 tbsp hot water
salt and freshly ground black pepper

Method

1. For the tagliatelle, place the flour and the egg into the bowl of a food processor and blend the ingredients until they have combined and the mixture has formed a dough.
2. Place the dough onto a floured surface and knead it for one minute.
3. Wrap the dough in cling film and transfer it to the fridge to rest for five minutes.
4. Remove the dough from the fridge and roll through a pasta machine twice, or until a flat sheet of pasta has formed.
5. Cut the pasta into five ribbons and place it into a saucepan of salted boiling water. Cook for 30 seconds and then drain off any excess water.
6. For the sauce, heat the oil in a saucepan and add the onion and garlic. Fry the ingredients until they become soft and golden in colour.
7. Add the broccoli, tomatoes, purée and water to the saucepan and mix the ingredients well. Cook for five minutes then season, to taste, with salt and freshly ground black pepper.
8. To serve, place the tagliatelle into a clean bowl and spoon the sauce over the top of the pasta.
