Ingredients
2 tbsp olive oil
100g/3½oz egg noodles, cooked according to packet instructions
1 handful fresh parsley, chopped
1 handful fresh coriander, chopped
squeeze lemon juice
2 tbsp sesame seeds, toasted
2 tbsp soy sauce
¼ red chilli, chopped
salt and freshly ground black pepper
lime wedges, to garnish
Method
1. Heat the olive oil in a wok, add the rest of the ingredients and stir-fry over a high heat for 2-3 minutes, or until warmed through.
2. To serve, spoon the noodles into a bowl and garnish with the lime wedges.
