Ingredients
75g/3oz butter
1 clove garlic, peeled and very finely chopped
8 tbsp finely chopped, mixed fresh herbs, e.g. basil, mint, coriander, dill, chervil, parsley, chives
1 tbsp finely chopped sage, or rosemary or oregano
1 oz/25g toasted hazlenuts
grated rind of ½ lemon
75g/3oz freshly grated parmesan cheese
4tbsp virgin olive oil
salt
freshly ground black pepper
450g/1lb fresh tagliolini - pasta
Method
1. Melt the butter, add the garlic and gently heat it through - do not fry it.
2. Add the herbs, hazlenuts, lemon and half the parmesan cheese.
3. Now stir in the olive oil, salt and pepper.
4. Meanwhile, cook the pasta for 1 minute or until al dente, drain and toss it in the sauce. Add a little of the cooking water if the mixture is too dry. Serve sprinkled with the remaining parmesan cheese.
