Ingredients
1 tbsp vegetable oil
55g/2oz assorted wild mushrooms
2 garlic cloves, chopped
1 pinch chilli flakes
2 tbsp soy sauce
85g/3oz rice noodles, cooked according to packet instructions, drained
2 tbsp chopped fresh coriander
chopped fresh chives, to garnish
Method
1. Heat the oil in a pan and fry the mushrooms, garlic and chilli flakes for 4-5 minutes, or until the mushrooms are golden-brown, then stir in the soy sauce, noodles and coriander. Cook for a further 1-2 minutes, or until the noodles are heated through.
2. Serve the noodles on a plate and garnish with the chopped chives.
