Ingredients
For the pasta
125g/4½oz penne pasta, cooked according to packet instructions
1 tbsp olive oil
1 garlic clove, finely chopped
¼ red onion, finely chopped
½ tsp dried chilli flakes
1 tbsp tomato purée
For the salad
½ avocado, stone removed, sliced
small handful rocket leaves
1 tbsp olive oil
½ tbsp balsamic vinegar
Method
1. Place all the ingredients for the pasta into a serving bowl, mixing well to combine the ingredients.
2. For the salad, place all the ingredients on a separate bowl, mixing together well. Serve alongside the bowl of pasta.
