Ingredients
1 tbsp vegetable oil
1 tbsp finely chopped fresh ginger
3 spring onions, finely chopped
½ yellow pepper, finely chopped
55g/2oz rice noodles, cooked according to packet instructions
1 lime, juice only
1 tbsp soy sauce
handful fresh coriander, chopped
cashew nuts, toasted, to serve
Method
1. Heat the oil in a wok until smoking. Add the ginger, spring onions and pepper and stir-fry for three minutes. Add the cooked noodles and stir-fry for a further 2-3 minutes.
2. Add the remaining ingredients and stir-fry for one more minute and serve immediately into a warmed bowl.
