Ingredients
150g/5½oz cooked vermicelli noodles
100g/3½oz fresh mango, peeled and diced
2 spring onions, finely chopped
1 red chilli, de-seeded and chopped
2 bamboo shoots, sliced into thin slices
1 pinch dried chilli flakes
2 tbsp soy sauce
2 tbsp honey
1 lime, juiced
1 handful fresh coriander leaves
1 tbsp sesame seeds
Method
1. To make the noodle salad, mix the noodles with mango, spring onions and red chilli in a large bowl.
2. Add the bamboo shoots, chilli flakes, soy, honey, lime juice and coriander leaves. Mix together well.
3. Serve on a plate and sprinkle with sesame seeds
