Ingredients
100ml/3½fl oz double cream, lightly whipped
½ lemon, zest only
1 tbsp white wine
2 tbsp icing sugar
squeeze fresh lemon
1 sprig fresh mint, to garnish
Method
1. Place all the ingredients, except the mint into a large bowl and whisk until the mixture forms soft peaks, when the whisk is removed.
2. To serve, place in a glass bowl and garnish with a sprig of fresh mint.
