Ingredients
For the knickerbocker glory
25g/1oz butter
25g/1oz brown sugar
100g/3½oz greengages
½oz tsp cinnamon
½oz vanilla pod
3 scoops of vanilla ice cream
To garnish
25g/1oz almonds, toasted
25g/1oz chocolate, grated
25g/1oz oats, toasted
Method
1. In a medium saucepan on a high heat melt the butter and sugar and add the greengages, cinnamon and the vanilla pod.
2. Simmer for four minutes on a low heat.
3. In a knickerbocker glory glass add some of the stewed greengages, then add a scoop of vanilla ice cream. Repeat this process until the glass is full.
4. To finish sprinkle the nuts, the chocolate and the oats on top.
