Ingredients
1 tbsp olive oil
½ onion, chopped
1 garlic, clove
½ tsp red wine vinegar
½ tsp caster sugar
150ml/4½fl oz passata
small bunch basil, chopped
125g/4oz ready-made gnocchi, cooked according to packet instructions
salt and freshly ground black pepper
Method
1. Heat the oil in a frying pan over a medium heat. Add the onion and garlic and fry until softened.
2. Add the vinegar and sugar and stir until the sugar has dissolved.
3. Add the passata, bring to the boil, then reduce the heat to simmer for 5-6 minutes.
4. Add the basil and season, to taste, with salt and freshly ground black pepper.
5. Add the gnocchi and stir well to coat.
6. To serve, place the gnocchi and sauce into a bowl and serve immediately.
