Ingredients
For the noodles
100g/3½oz egg noodles, cooked and drained
3 free-range eggs, beaten
2 tbsp chopped fresh parsley
salt and freshly ground black pepper
2 tbsp olive oil
For the chutney
½ mango, chopped
½ fresh red chilli, finely chopped
1 lime, juice only
2 spring onions, finely sliced
2 tbsp olive oil
Method
1. For the noodles, mix the cooked noodles with the eggs, parsley, salt and freshly ground black pepper in a bowl. Heat a medium frying pan, add the olive oil and pour in the noodle mix. Fry for 3-4 minutes on each side, or until the egg has set and both sides are golden-brown. Turn out onto a serving plate.
2. For the chutney, mix all the chutney ingredients together in a bowl. Spoon the chutney on top of the noodles to serve.
