Ingredients
200g/7oz rice noodles
1 tbsp vegetable oil
2 free-range eggs
1 tsp sesame oil
2 spring onions, finely sliced
1 tbsp soy sauce
To serve
small handful fresh coriander
1 lime, cut into wedges
Method
1. Place the rice noodles into a bowl of boiling water and leave to soak for 3-4 minutes, or until softened. Drain well and set aside.
2. Heat the vegetable oil in a wok over a high heat. Add the eggs and stir to scramble slightly for 30 seconds.
3. Add the sesame oil and cooked noodles and stir to coat the noodles in the eggs. Add the spring onions and soy sauce and stir well.
4. To serve, spoon into a serving bowl and garnish with coriander and lime wedges.
