Ingredients
For the noodle cake
200g/7oz egg noodles
dash sesame oil
2 tbsp vegetable oil
pinch dried chilli flakes
For the sweet and sour sauce
dash olive oil
½ red pepper, finely chopped
2 tsp caster sugar
1 tbsp white wine vinegar
pinch dried chilli flakes
splash water
2 tsp tomato ketchup
chopped fresh parsley, to garnish
Method
1. For the noodle cake, cook the noodles according to the packet instructions and drain.
2. In a small frying pan, heat the sesame and vegetable oil, add the cooked noodles and fry until golden-brown and crisp.
3. Turn over the noodles, sprinkle with the chilli flakes and fry for 2-3 minutes.
4. For the sweet and sour sauce, simmer all the ingredients in a small pan for ten minutes.
5. To serve, place the noodle cake onto a serving plate and pour over the sweet and sour sauce. Garnish with chopped fresh parsley.
