Ingredients
4 free-range eggs
1 orange, finely grated zest only
2 tbsp cocoa powder
1 tbsp icing sugar
25g/1oz butter
85g/3oz fettucine pasta, cooked according to packet instructions and drained
Method
1. Preheat the oven to 220C/425F/Gas 7.
2. Whisk the eggs and orange zest together in a large bowl.
3. Sift in the cocoa powder and icing sugar and whisk again to combine.
4. Heat the butter in a heavy-based ovenproof frying pan and add the cooked pasta. Pour in the egg mixture.
5. Transfer to the oven for 4-5 minutes until the eggs are just set. Serve immediately.
