Ingredients
110g/4oz rice noodles, blanched
For the salsa verde:
3 tbsp fresh mint, finely chopped
3 tbsp fresh coriander, finely chopped
3 tbsp fresh chives, finely chopped
½ red pepper, finely diced
1 tsp crushed chillies
1 tbsp sesame oil
2 tbsp vegetable oil
1 tbsp honey
1 lime, juice only
Method
1. Preheat a wok.
2. Combine all the salsa verde ingredients in a small bowl.
3. Add the salsa verde and noodles to the wok and stir fry for 2-3 minutes, or until heated through.
4. Remove the wok from the heat.
5. Ladle the noodles and sauce into a shallow dish and serve.
