Ingredients
handful rocket (optional)
extra virgin olive oil
1 packet of salmon in a cream sauce
2 fresh lasagne sheets cut in half
2 handfuls of fresh spinach
1 tomato, de-seeded and diced fine
balsamic vinegar
2 tubes basil pesto
fresh chervil
Method
1. Firstly deep fry the rocket in oil until translucent. Remove from the oil and drain onto some kitchen paper.
2. Cook the salmon as per the instructions on the packet.
3. Blanch the pasta in a pan of boiling salted water. While the pasta is cooking, saute the spinach and place in a pile in the centre of the plate.
4. Place one of the halved sheets of pasta on top of the spinach and then add the salmon.
5. Add the tomatoes to the sauce and spoon over the salmon.
6. Drizzle with balsamic vinegar around the edge together with the pesto.
7. Add a few chervil leaves. Top with the deep fried rocket and serve.
