Ingredients
For the salad
1 tbsp sesame oil
1 tbsp soy sauce
2 tbsp clear honey
¼ cucumber, peeled, seeds removed and finely chopped
¼ red pepper, finely chopped
100g/3½oz cooked egg noodles
salt and freshly ground black pepper
For the chilli cashews
1 tbsp olive oil
1 tbsp vegetable oil
50g/2oz cashew nuts
½ tsp salt
½ tsp chilli flakes
Method
1. For the noodle salad, place the sesame oil, soy sauce and honey into a large bowl and mix well.
2. Add the cucumber, pepper and cooked noodles, season with salt and freshly ground black pepper and mix well.
3. For the chilli cashews, heat the olive and vegetable oil in a frying pan over a medium heat and fry the cashews for 3-4 minutes. Drain off the oil and fry for a further 2-3 minutes, then add the salt and chilli and stir well to coat the nuts.
4. To serve, place the noodle salad into a bowl and sprinkle over the nuts.
