Ingredients
150ml/¼ pint vegetable oil, for deep frying
150ml/¼ pint olive oil
250g/9oz fresh tagliolini pasta
icing sugar and cocoa powder, to dust
Method
1. Place the vegetable oil and olive oil into a deep, heavy-bottomed saucepan and heat until a small cube of bread sizzles and turns golden-brown when dropped into it. (CAUTION: hot oil can be dangerous. Do not leave unattended.)
2. Carefully add the pasta to the hot oil and deep fry until crisp and lightly golden-brown. Remove from the oil with a slotted spoon and drain on kitchen paper.
3. To serve, place the deep-fried tagliolini onto serving plates and dust generously with icing sugar and cocoa powder.
