Crispy noodles

Ingredients

100g/3½oz rice noodles
500ml/17½fl oz vegetable oil
1 tsp paprika
1 tsp curry powder
1 tbsp caster sugar
small bunch fresh parsley leaves
lemon wedge, to serve

Method

1. Heat the vegetable oil in a deep heavy-bottomed pan until a breadcrumb sizzles and turns brown when dropped into it. (CAUTION: hot oil can be dangerous. Do not leave unattended.) Add the noodles, they will puff up immediately. Carefully remove with a slotted spoon.
2. Drain the noodles on kitchen paper, then arrange in a serving bowl.
3. Dust the paprika, curry powder and sugar over the noodles and sprinkle the fresh parsley over the dish.
4. Serve the noodles in the serving bowl with a lemon wedge to garnish.
