Ingredients
4 chicken breasts, skinned and boned
30g/1oz butter
1 tbsp vegetable oil
450g/1lb plums, stoned and chopped
120g/4oz apricots, stoned and chopped (you can use dried apricots)
2½cm/1in grated ginger
1½ long red chillies, de-seeded and very finely chopped
2 cooking apples, peeled, cored and sliced
150ml/5fl oz balsamic vinegar
150ml/5fl oz water
salt and freshly ground black pepper
Method
1. Cook the last 8 ingredients together in a heavy based pan for about 20 minutes to make a sauce.
2. Brown the chicken breast in the oil and butter. Add the sauce and cook together gently for a further 15 minutes. Season well.
3. Remove the chicken breasts, put on to a plate, pour over the sauce and serve.
4. Serve with rice or green salad.
